instant mashed potatoes… September 20, 2005

…are the BEST INVENTION EVER, i mean it. those wonderfully flaky flakes just poof up like you wouldn’t believe, and all it takes it a little milk and butter and hot water! crazy! i’ve been fixing instant mashed potatoes for years, but i don’t think i ever truly appreciated how wonderful they are until now. besides being convenient, they are incredibly tasty as well. they go with everything, and you can serve them with butter, cheese, or gravy. a resounding two thumbs up for instant mashed potatoes!

i’m back to contemplating school options again. i know i want to go back, but i’m having a hard time deciding what i want to study. see, the simple fact is, i’m not brave enough to try and study anything i might be “passionate” about, nor am i ethically-challenged enough to say, “i’ll follow the money, regardless of whether or not i have any actual interest in the subject matter.” so far, i’ve applied to programs in dental hygiene, respiratory therapy, and health information management. the first is a BS program with many, many prerequisites to be accomplished before even being considered for actual “acceptance”. eh. the second is a community college associate’s degree program, supposedly designed to put you to work immediately upon graduation. the third is a BS program in what is supposedly one of the fastest growing occupations ever, according to the bureau of labor statistics. i did a quick look around on careerbuilder.com and typed in each potential job title along with the area i want to be back in. “dental hygienist” returned 4 results, “respiratory therapist” returned 26, and “HIM/medical coding” returned 25. so i think i can rule out dental hygiene.

oh, i know all this whining about school is SO LAME. if only i could be a professional student and get paid to go to school and just take classes in anything i wanted, WOW, that sounds awesome!

BUT is it as awesome as instant mashed potatoes? i’ll have to think about that one…

sunday nights are 70’s night at our house. June 27, 2004

that means whatever is for dinner must have a “cream of” soup as one of the ingredients. i make darn good chicken enchiladas if i do say so myself.

2 cups cooked shredded chicken

3/4 cup chopped onion

1 cup sour cream

1 cup milk

1 small can green chiles

1 can cream of chicken soup

8 oz. shredded monterey jack/cheddar cheese

12 tortillas (whatever kind you like – i’m a corn person myself)

* mix together sour cream, milk, soup, onion, and chiles. add chicken. pour a little of the mixture in the bottom of the baking pan (so the enchiladas don’t stick).

* brush tortillas with vegetable oil. wrap in plastic wrap and microwave for 2 and a half minutes.

* spoon chicken mixture into tortillas, add some cheese, roll up and place in baking pan.

* top enchiladas with whatever sauce and cheese is left. bake at 350 degrees for 25 minutes.

* top with lettuce and tomatoes and pico de gallo. sour cream too, if you’re not health conscious.

greatly enhanced by margaritas as a beverage, although corona with lime will work in a pinch.

i wish i was a better cook – i mean, i’m not bad, but i rely quite heavily on boxes and cans and frozen stuff. not that it’s all that terrible – if you like moderately spicy, you have to try THIS:

jambalaya fiesta

1 package Tony Chachere’s jambalaya mix

1/2 lb. ground beef

2 1/4 cups water

1/2 cup cut up cooked chicken

1 10 oz. can mexican style corn

1 can sliced black olives

1 tbsp. lemon juice

in large skillet, brown ground beef, drain excess fat

add jambalaya mix, water, chicken, corn, olives, and lemon juice

bring to a boil, reduce heat, cover, simmer for 25 minutes

YUM

went to the ren faire yesterday, and it was nice because it wasn’t nearly as crowded as previous years – we could actually get a seat in the tree bar. oh, the tree bar has a real name, which i didn’t know. still, i like calling it the tree bar. Boy-o did really well – slept all day except to wake up and eat. i was worried about him getting overheated, but he did fine. didn’t buy any souvenirs, coz we are broke as a joke. when we left, we went back to s’s house and bbq’d and had some beers. good times, good times.
